Unlike a traditional dough based pizza this has a crispy base made from cauliflower. Yes, I know it sounds weird but trust me, it’s absolutely delicious. Baked until golden and topped with a homemade tomato sauce, fresh greens, shaved fennel and a scattering of basil and pecorino.

Quesadillas, like a lot of Mexican food, get a bad write-up as being cheese- laden and lazy, but they are a truly quick meal, and by filling them with not just cheese they become more nourishing and much more delicious. Here I have stepped away from the straight-up Mexican quesadillas and introduced some Spanish flavours.

STRAWBERRY + ELDERFLOWER SORBET
Just three ingredients go in to making this sweet and refreshing sorbet recipe. Plump, ripe and juicy strawberries blended with sweet elderflower cordial and a whole lemon for a sherberty tang.
