Anna Jones is a cook, writer, the voice of modern vegetarian cooking and the author of the bestselling One: Pot, Pan, Planet, A Modern Way to Eat, A Modern Way to Cook and The Modern Cook’s Year.

I am heading to Ballymaloe food festival this year in Ireland and perhaps a couple more events which are yet to be confirmed.

Re your lovely nut roast, do you freeze after youve assembled it in the tin and cook from frozen or do you bake it completely then heat through? Ive done the first option but defrosted first and although delicious it fell apart when we sliced it.

Thanks for reaching out. This isn't one I tend to freeze, but if I were I would freeze the mix. I would probably defrost on the morning I wanted to cook it and then assemble and bake to serve. Let us know how you get on

Hello Alexandra. Thanks so much for your question. Indian and Asian markets are often good places to find them cheaply, though don’t be tricked into buying massive bags, as they will spoil in a few months and lose their flavour. I have listed some of my favourites here. I store them all in little glass jars so I can easily see what I have. I also like Diaspora co, and for herbs Daphne and Chloe is hard to beat.
